2 cups whole-wheat rigatoni or fusilli pasta
3 tablespoons extra-virgin olive oil, divided
1 head small radicchio, chopped
4 1/2-5 ounces baby arugula
1 zucchini, diced
4 cloves garlic, chopped
4-6 canned artichokes, rinsed and drained
2 tablespoons shaved pecorino Romano cheese

Directions

Cook pasta according to package directions.
Meanwhile, heat 2 tablespoons olive oil in a large skillet. Add radicchio and arugula. Stir, letting greens cook down for 1 to 2 minutes.
